-Ingredients:
2 pounds of fresh, ripe tomatoes (about 9 medium-sized)
2 tablespoons of olive oil
1 medium onion, finely chopped
2 cloves of garlic, minced
A handful of fresh basil leaves, chopped (or 1 teaspoon dried basil)
Salt and pepper to taste
-Preparation Steps:
1.Prepare the Tomatoes:
Score a small "x" at the bottom of each tomato and blanch them in boiling water for about 30 seconds.
Remove the tomatoes and place them in cold water. Peel off the skins, then remove the seeds and roughly chop the tomatoes.
