CREAMY CHICKEN & RICE CASSEROLE
Start by preheating your oven to 350°F (175°C).
Follow the Rice-A-Roni package instructions to get it perfectly cooked.
While the rice is dancing in the pot, pull apart your rotisserie chicken, discarding the bones and keeping the juicy meat.
Once your rice is ready, mix in the mushroom soup and sour cream until it's all well combined.
Now, fold in the chicken pieces into your creamy rice mix.
Pour your chicken-rice mixture into a baking dish (a 9-by-13-inch pan works great, but use what you have). Make sure you've sprayed it with some non-stick cooking spray first.
Bake your beautiful dish uncovered for about 40 minutes.
Get it out of the oven, sprinkle the French-fried onions on top, and bake for an additional 5 minutes.
Finally, remove it from the oven and let it cool before you dig in!
